I got off work last night and couldn't think of anything I wanted to cook. When I got home there wasn't much of anything that made a normal meal so I had to throw stuff in a bowl. I have to tell you, I really enjoyed the salad I made.
In the fridge I had: a bagged mixed salad sliced Mushrooms Cucumber Tomato Polenta I sauteed the mushrooms and the polenta for a few minutes. I put them over the salad with the sliced tomatoes and cucumber and used a sun dried tomato dressing. This dinner was from start to finish a 15 minute project. I ate dinner late yesterday, 10ish. I had simple green salad with tomatoes, cucumber and kalamata olives (no dressing). with it, i had some tofu that my friend's wife made the other night. even to my suprise, it was filling.

Your dinner sounds delicious. I dob't like polenta too much--but everything else sounds yummy! I love mushroooms. Baby bella, shitake, portabello I use the portabello as a meat substitute. BUT recently... Jay, if you like grits you'll enjoy Polenta. Best I can describe is that it is a corn based product. They sell it in the Wal-Mart refregerated food section and there are instructions on the pack. It looks like a tube of sausage, but will be found in the health food or vegetable section.
I've only ever had it fixed on way, pan fried, but there are other ways to prepare it. Look at it this way, its a $2 risk. Try it and see if you can get with it. _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ _ |
