HU Professor's Book Has Good Health Recipe|

Hampton, VA - Hampton University Professor Joanne K. Morse, Ph.D., has a new book, How Low Can You Go? Nutritional Limbo, that aims to educate readers about healthy eating and diet. Morse is an associate professor in the HU School of Pharmacy.
A book signing, coordinated by Morse's alternative medicine students, is scheduled for noon to 2 p.m., April 10 in the HU Student Center. Morse, who also teaches anatomy and physiology in the School of Pharmacy, has been at HU 10 years. Once 210 pounds at 5'6, Morse, 68, said her attendance three years ago at a program on aging changed her lifestyle. "I had always said 'I wish I wanted to lose weight.' I always knew I didn't lose weight because I wasn't motivated," she said. "Motivation is the key. I learned the two main things that determine how you age are attitude and lifestyle. Happy people age better, and lifestyle has a major impact on aging as well. When you look into lifestyle, you have to include your eating habits." Chapters from Morse's book include instruction on seasoning without salt, low cholesterol and protein. A calories per day calculator for adults, as well as a recipes for vegetables with jerk sauce and low sodium noodle bake are available on the book's corresponding website, www.howlowcanyougobook.com. Morse, who started college at 38, and earned her Ph.D. at 47, said she wants readers to know that at any age, a change for the better is a good thing. "I changed direction and stated teaching at 59. It's never too late to improve your lifestyle, and the aging process," she said. "The younger you start, the better. This book is geared toward everyone." The book will be available at the book signing and is also on sale at Barnes and Noble and amazon.com for $17.95. Student copies at the book signing are $14.
